Cabernet Franc

Blend: 100% Cabernet Franc

Analysis:

Alcohol: 14.0 % | PH: 3.87 | Titratable acidity: 7.76 g/L

Bottling Date: June 2009

Tasting Notes:

This wine has a dark plum core with a cherry rim in appearance. Aromas of this wine boast powerful expressions of ripe dark fruit with chocolate and coffee undertones and a hint of tobacco. The dark fruit and chocolate persist onto the palette along with strawberry and some capsicum appearing. Balanced acidity and velvety tannins give the palette some great length and persistence that will carry this wine for years to come. Recommend decanting for the best result.

Wine Making:

It was a summer of relative warmth that held through to August. Unusually cool and wet weather in late September and early October delayed the ripening of some red varietals. However, the quality of grapes grown was generally good for the Okanagan.

The grapes were harvested on the 22nd of October, 2007 from the Burrowing Owl Estate vineyards.  The grapes were de-stemmed, crushed, and inoculated with our preferred yeast strains. The wine was allowed to remain on skins for an average of 20 days prior to pressing off. The wine was aged in oak barrels (25% new, mainly French) with periodic rackings. Bottled on June 10th, 2009.
